Baked Banana Oatmeal Take 2

As I was replying to a comment on FB, I realized my baked morning oatmeal had evolved from the original recipe.

I love making this in the morning, as you can see from multiple photos on Instagram…

Here is a quick and dirty evolved recipe:

Ingredients

1/4 cup oatmeal

1 tbsp cornmeal

1 Tbsp agave or honey (optional)

1 scoop of protein powder

1 egg

1 tsp baking powder

1/8 tsp salt

1/4 cup almond milk

1 mashed banana

Directions

1. Preheat oven to 400. Grease Ramekin.

2. Combine dry ingredients in a bowl. Set aside.

3. In small bowl mix together egg, and almond milk. Stir in mashed banana and sweetener (agave or honey).

4. Add wet ingredients into dry and stir until well combined.

5. Pour into Ramekin. Place in oven for 20-25 minutes. Until top is golden and crispy.

Chocolate in the Morning

What’s not to love about chocolate in the morning?

Warm, gooey bowlful of health with a sprinkle of chocolate to give you a boost of energy to start the day. Chocolate moderation at it’s finest I suppose.

This is a variation of Banana Baked Oatmeal for One.

Chocolate Breakfast Oatmeal

Serves 2, Prep and Cooking time 30 minutes

Ingredients

1/2 Cup old fashioned rolled Oats

1/4 Cup Ground Cornmeal

1 egg beaten

1 Tbsp agave nectar

1 Cup Almond Milk

1 Scoop Chocolate Protein Powder

1 tsp Cocoa Powder

1 tbsp chocolate chips

1 Tsp Baking Powder

Sprinkle of Salt

Directions

1. Preheat oven to 350. Grease ramekins or oven safe bowl

2. In large bowl mix dry ingredients.: oatmeal, cornmeal, baking powder, salt, protein powder, cocoa powder.

3. In medium bowl mix wet ingredients: beaten egg, agave, almond milk.

4. Pour wet ingredients into dry bowl and stir until well combined.Fold in chocolate chips.

5. Pour mixture into two Ramekins, or one large baking bowl.

6. Bake for 20-25 minutes, until oatmeal is puffed.

7. Sprinkle with chocolate chips if desired, and serve warm for heavenly gooeyness.

 


Healthy Brunch

Allright, so your peeps are in town? Or, are you visiting? Either way most people have these ingredients stored in their cupboard. You can whip up a easy, healthy breakfast before tearing into gifts.

Best part is you can use any type of fruit or topping. There tons of varieties of this recipe floating around. I found this one on 365 days of baking. Since we had Mixed berry yogurt, I used a blueberries and strawberries. Yummy and filling.

Fruity Baked Oatmeal

Serves 4, preparation time 5 min, Baking time 25-30

Adapted from 365 Days of Baking (Day 269)

Ingredients

1 1/2 Cup rolled oats

1 1/2 cup mixed fruit ( I used blueberries, strawberries, and banana)

1 1/2 cups almond milk

1 egg

2 Tbsp honey

1 1/2 tsp cinnamon

1/8 salt

1 tsp vanilla extract

1 container of Fruit yogurt (optional)

Directions

Preheat oven to 350

Coat 8X8 baking pan with cooking spray

In medium bowl beat egg. Add in milk, honey, cinnamon, and salt. Mix well.

In a small bowl combine oats, and fruit.

Press oatmeal and fruit in bottom of baking pan.

Pour milk mixture over.

Bake 25-30 minutes.

Pour into bowls when cooled. Top each bowl with half a container of yogurt.

Talkin’ 2 Myself

Sometimes you just feel like playing a little Eminem song.

Take for example the today. It started off pretty good. Was on the way to the gym for a morning workout. My car took a bit to start.

No biggie, it is 13 years old with 187,000 miles and it has been cooler at night and in the morning. I’ll just warm it up a bit, get some gas and then I’ll be at the gym.

Turns out I wouldn’t be running on the treadmill, instead I would be meeting some new helpful friends at the gas station. After getting gas my car decided that it needed a break. After I refueled, it just would not start again.

Some nice guy heard the problem, and offered a jump. The jeep apparently decided the Shell station was a nice place for a long nap. All we got was click, click, click. I thanked him and he was on his way.

Ok, no stress I’ll just call my husband. Through the years he has had many intimate experiences with the jeep. Maybe he can awaken her from the slumber.

Well, being the techy savy person I am I finally updated my iphone this morning, unplugged it and ran out the door. I think I was a little frazzled and couldn’t remember my password to sign into the phone to get past the new updates. Arrrggggg.

I notified the gas station attendant of the situation who exclaimed “let’s get a group of guys to push the car into a parking spot so you can leave it there for awhile.” Great. Hello more new friends, who lent some helping hands.

Did you know its very hard to turn the steering wheel when the car is not on???

Good thing I had my running shoes on. I ended up running back home to reset my password and unlock my phone through e-mail. When my savior gets home we are going to buy a new battery. Hopefully this will be the solution.

In the meantime I made comfort in a bowl.

Chocolate Icebox Oatmeal

Remember banana icebox pudding with graham cracker crust? This is the healthy chocolate version.

1/2 cup oatmeal

1/4 cup oatbran

1/4 cup chocolate almond milk

1 chopped frozen banana

1 Tbsp chocolate instant pudding mix

1 scoop chocolate protein powder

2-3 graham crackers

1. Make oatmeal according to directions. Substitute 1/2 cup of water for 1/2 cup of chocolate almond milk. Add in oatbran as well.

2. As the oatmeal nears the consistency you prefer stir in remaining ingredients.

3. Let set for a few minutes. You can sweeten to taste by adding in more chocolate milk.

4. Crumble in one graham cracker. Use remaining ones for dipping.

5. Change Eminem cd to Jack Johnson and chill.

Pumpkin spice oatmeal

Looking back at my pics I realized I’m like a kid who can’t stay in the coloring lines. Hmmm, go figure. Still have my work cut out for me. It’s a work in progress. Just like the blog roll page (which I am leaning towards and will continue to develop in next few days).

Anyways, on to other topics like food! This bowl of comfort has been perfect for the colder days we have been having here. Of course it’s all relative since we hardly have more than 20 degree temp change all year. But, I have come to appreciate the more subtle changes here in southern CA over Rochester, NY where I grew up.

I have been definitely getting enough Beta Carotene this week with all the pumpkin I have been eating. Good for the eyes! This oatmeal mix is perfect following a workout, or as a meal or snack. The protein will help to rebuild your muscles and keep you full for awhile. This version is a little sweeter with applesauce and a little agave, but both will give you energy. The insulin spike will be dulled by the fiber from the oats and protein. Good stuff.

Pumpkin spice oatmeal
1/2 cup slow cooking oatmeal
1/4 cup oatmeal
1/4 cup pumpkin purée
1/4 cup unsweetened applesauce
1tsp agave
1tsp vanilla extract
1 cup almond milk
1/2 cup water
1 scoop protein powder
1 tsp cinnamon
1 tsp pumpkin spice

Bring water and almond milk to a boil. Stir in spices, applesauce and pureed pumpkin. Bring back to a boil and place on med heat. Add in oatmeal and cook for 10-15 minutes. Then add in Oat bran. Keep cooking until it’s consistency you desire. Lower heat and add in vanilla extract and agave. Continue to stir, and turn off heat. Then add in the protein powder. You can eat part immediately and place half in the fridge for the morning. Breakfast to go. Perfect!
