Going Greek

I apologize if you received a draft of this post. My finger was trigger happy and I accidentally hit Publish. Sigh… But, now you have the real deal.

Need a quick, healthy snack idea? Takes less than 5 minutes to throw together. Easy to transport to work.

I hopped on the Greek yogurt train. I was holding back because I can only handle so much dairy at one time. Enough said, eh?

I can see why people rave about the stuff. Lots of protein, plus it has the flexibility of being a creamy sweet or savory. Not to mention great nutrients for your bones such as Calcium. I gets it.

So here’s a quick sweet snack for work, or at home.

Berry Greek

1/2 cup Greek yogurt

1/4 cup blueberries

1/2 –whole banana

1 Tsp honey

Sprinkle of Stevia (optional depending on how sweet you want)

Topped with Trader Joe’s Strawberry Yogurt O’s (or granola or leave out)

Add yogurt to bowl (stir in Stevia if desired), top with fruit. Drizzle some honey. Sprinkle some O’s and enjoy.

Have your cheesecake and…..

This is a great filling breakfast that provides carbs for energy from the oats and fruit, as well as protein to keep you full from the low fat cottage cheese. Plus it tastes amazing! Could also be a sweet spot snack if you do crave cheese cake ;) . I mean that never happens to me, I have no idea what you are talking about. I am only making that suggestion for other people.

Any who, another bonus of this super easy oatmeal with the mostest is you can make a huge batch and have a healthy snack for later in the week (or that day… who is that person…?). Or it will solve the morning dilemma of what to make for breakfast. Oh no worries- it is really tasty straight from the fridge!

Fruity Cheesecake Oatmeal                                                                                                                       

Trader Joe’s – Oatmeal Organic ¼ cup

Hodgson Mill Oat Bran Hot Cereal – Oatbran 1 tbsp

Trader Joe’s – Low Fat Cottage Cheese, 1/4 cup

Frozen Blueberries – 1 cup

1 frozen Banana

Trader Joe’s – Organic Raw Blue Agave Sweetener, 1 tbsp

Trader Joe’s – Almond Smooth(Milk) Vanilla Unsweetened, 1 cup ( 240mL)

½ tsp vanilla extract

1 cup water

1 ½ tsp cinnamon

If you really like sweet you can sprinkle Stevia to taste….

1. In a medium post over medium heat, bring water, milk, oats and oat bran to a boil. Reduce the heat and allow it to simmer, while continuing to stir.

2. Cook for 10-15 minutes, until the oatmeal is consistency you prefer.

3. In last few minutes stir in frozen blueberries, banana,  cottage cheese, agave, and vanilla until cottage cheese has melted.

4. Sprinkle with cinnamon and add more fruit!

Tried on wedding dress yesterday! It’s really happening ;) . I really am so lucky. But I’m going to stop before I get too sappy……

To celebrate had a Blueberritini :           (1.5 ounce blueberry vodka, club soda to taste, and frozen blueberries)   Yummmm

So going to talk a lil about music today. Unintentionally, I was reading Scar Tissue by Anthony Kiedis, lead singer of Red Hot Chili Peppers, when they just released a new cd I’m With You. Their lead guitarist John has taken a break from the band again, so it is very Anthony and Flea dominant in a good way. The guitarist they have now has been touring with the band for a decade so they are still tight, and he has brought in some new twists like piano! Plus, I heard Flea was taking some piano lessons as well- whoa! Really good cd. Not sure if there is a crazy #1 single on this bad boy, but the cd is solid through and through. We listened to it three times last night. Good melodies, riffs, of course bass and lyrics all with catchy rhythms and still maintaining that chili pepper sound at almost 50! Impressive boys!!
