Peanut Butter Banana Pancake Like Crepe

My husband loves crepes, but he’s not such a fan of pancakes. I love both, and sometimes miss pancakes. So, I created a batter that when poured and allowed to sit on the griddle, you have a pancake. Or, you can spread and thin out the batter after it’s poured, and have a crepe. Now both crepe and pancake lovers are happy Winking smile.

And what better way to fuel up on Carbs before your workday, or workout? These also have a little healthy fat from the peanut butter, and protein from the eggs and yogurt to keep you fuller longer. Plus, with the sweetness from agave and banana you won’t need any of that sugary syrup.

Peanut Butter Banana Pancake Like Crepe

Adapted from Runner’s World Magazine
Makes 16 Pancakes or Crepes
Ingredients
Dry
1 1/2 cup whole wheat flour
1/2 cup oatmeal
1/4 Tsp salt
1 Tsp baking powder
1/2 Tsp baking soda

Wet
2 Tsp Agave
2 Tbsp Greek Yogurt
2 cups Almond Milk
3 Large Eggs
2 Tsbp PB
1 Tsp vanilla
1 mashed banana

Directions

1. Combine dry ingredients. Set aside.
2. Mix (I used my hand mixer) agave, eggs, peanut butter and banana together until creamy. Do not over mix eggs.
3. Mix in Greek yogurt, almond milk and vanilla.
4. Pour wet ingredients into dry and stir until well combined.
5. For a pancake pour onto heated and greased griddle. Heat until bubbles form.  Then flip and heat until golden brown.
6. For a more crepe like pancake, pour onto heated greased frying pan. Lift pan, and gently rotate so batter slides to the edges of circle making it larger. This thins out the pancake. Cook until bubbles form (not as long as the pancake) and flip.
Or if you have a crepe spreader (we do not), place in the center of the batter and rotate spreading the crepe into a wider circle.

I apologize if you received a draft of this post. My finger was trigger happy and I accidentally hit Publish. Sigh… But, now you have the real deal.

I hopped on the Greek yogurt train. I was holding back because I can only handle so much dairy at one time. Enough said, eh?

I can see why people rave about the stuff. Lots of protein, plus it has the flexibility of being a creamy sweet or savory. Not to mention great nutrients for your bones such as Calcium. I gets it.

So here’s a quick sweet snack for work, or at home.

Berry Greek

1/2 cup Greek yogurt

1/4 cup blueberries

1/2 –whole banana

1 Tsp honey

Sprinkle of Stevia (optional depending on how sweet you want)

Topped with Trader Joe’s Strawberry Yogurt O’s (or granola or leave out)

Add yogurt to bowl (stir in Stevia if desired), top with fruit. Drizzle some honey. Sprinkle some O’s and enjoy.

My favorite meal. I can eat breakfast anytime of day. Even for dinner, or dessert. Yep, try it sometime. In fact have your veggies at lunch, and then try this for dinner.

Or, surprise your sweetie with this easy healthy meal for Valentine’s Day. So much better to give tasty healthy food, then a box of sugar and fat (although I must say those dang chocolate boxes suck me in)!

I found this healthy carb loaded meal in Racing Weight, by Matt Fitzgerald. You can purchase this book through amazon here. I added some Trader Joe’s fruit yogurt on top, and Trader Joe’s Veggie Patty on the side for some added protein and sweetness.

Banana Stuffed French Toast adapted from Racing Weight

Serves 2, can be whipped up in 15 minutes

Ingredients

4 slices whole grain bread

1 large egg

1/3 cup Almond milk

1 tsp stevia (or other sugar substitute, can also omit)

1 tsp vanilla extract

2 tsp cinnamon

2 medium bananas, mashed

smidge of butter or coconut oil for cooking

Directions

1. Make two sandwiches with the bread and mashed bananas. In a shallow bowl combine the egg, milk, stevia, vanilla extract, and 1 tsp of cinnamon. Whisk to combine.

2. dip each sandwich in the egg and milk mixture and cook in a lightly greased non stick pan over medium heat for about 2 minutes on each side until golden brown.

3. Cut in half. Sprinkle remaining cinnamon on top. Top each half with a half container of fruit yogurt.

Creamy Polenta for 2

Did those pies awaken your sweet tooth? Need a sweet healthy carb to prevent a huge food coma crash? Here is a easy breakfast, lunch or even dessert to help transition back to the healthy side.

It’s banana bread in a bowl’s simpler cousin. It will give you energy to run, or head to back to the mall if you are brave, very brave.

Creamy Polenta

Prep time < 5 min, Cook Time 8 minutes, Serves 2

1/2 cup Cornmeal

1 chopped frozen banana

2 Tsp Organic raw sugar

2 Cups Almond milk

1 Tbsp Cinnamon

1 Tsp vanilla extract

1. Pour in Almond milk in medium pot. Stir in banana, sugar, cinnamon and vanilla extract. Bring to a bowl.

2. Lower heat to low, whisk in cornmeal. Simmer until it thickens and becomes consistency you desire.

3. Pour in bowl and serve.

Talkin’ 2 Myself

Sometimes you just feel like playing a little Eminem song.

Take for example the today. It started off pretty good. Was on the way to the gym for a morning workout. My car took a bit to start.

No biggie, it is 13 years old with 187,000 miles and it has been cooler at night and in the morning. I’ll just warm it up a bit, get some gas and then I’ll be at the gym.

Turns out I wouldn’t be running on the treadmill, instead I would be meeting some new helpful friends at the gas station. After getting gas my car decided that it needed a break. After I refueled, it just would not start again.

Some nice guy heard the problem, and offered a jump. The jeep apparently decided the Shell station was a nice place for a long nap. All we got was click, click, click. I thanked him and he was on his way.

Ok, no stress I’ll just call my husband. Through the years he has had many intimate experiences with the jeep. Maybe he can awaken her from the slumber.

Well, being the techy savy person I am I finally updated my iphone this morning, unplugged it and ran out the door. I think I was a little frazzled and couldn’t remember my password to sign into the phone to get past the new updates. Arrrggggg.

I notified the gas station attendant of the situation who exclaimed “let’s get a group of guys to push the car into a parking spot so you can leave it there for awhile.” Great. Hello more new friends, who lent some helping hands.

Did you know its very hard to turn the steering wheel when the car is not on???

Good thing I had my running shoes on. I ended up running back home to reset my password and unlock my phone through e-mail. When my savior gets home we are going to buy a new battery. Hopefully this will be the solution.

In the meantime I made comfort in a bowl.

Chocolate Icebox Oatmeal

Remember banana icebox pudding with graham cracker crust? This is the healthy chocolate version.

1/2 cup oatmeal

1/4 cup oatbran

1/4 cup chocolate almond milk

1 chopped frozen banana

1 Tbsp chocolate instant pudding mix

1 scoop chocolate protein powder

2-3 graham crackers

1. Make oatmeal according to directions. Substitute 1/2 cup of water for 1/2 cup of chocolate almond milk. Add in oatbran as well.

2. As the oatmeal nears the consistency you prefer stir in remaining ingredients.

3. Let set for a few minutes. You can sweeten to taste by adding in more chocolate milk.

4. Crumble in one graham cracker. Use remaining ones for dipping.

5. Change Eminem cd to Jack Johnson and chill.
